Kalua Pig and Salad with Hawaiian dressing

This is one of our favorites! Kalua Pig! We don’t have a hole in our backyard to roast a pig, nor do we have banana leaf lying around, but we make do. I’ll show you how!

Kalua Pig:

Pork Butt Roast (3 lbs) – $4.36
1/2 head cabbage (I didn’t have any this time, but I prefer it with cabbage) – $.85
1 Tbsp Sea Salt – pantry
1 Tbsp liquid smoke – $.15
1/2 cup water

COST: $5.36

Make several shallow “X” cuts along the roast. Rub with salt and liquid smoke and make sure and get it in all the cuts. Place roast on large sheet of tin foil in roasting pan. Make a sort of “boat” shape from the tin foil and add 1/2 cup water. Seal tin foil tightly around roast. Cover roasting pan with a second piece of tin foil, tightly.

Roast in a 250 degree oven for 6 hours or 2 hours per pound. When meat is done, remove and shred with fork. It will fall apart, trust me. Make sure and save all the yummy juices!

Chop cabbage in 2 inch squares and place in large pot. Add shredded pork and juices from roasting pan and cook/simmer on medium heat about 10 mins or until cabbage is cooked down and wilted. You can add more salt or liquid smoke to your taste. Serve over rice with Shoyu or standard soy sauce.

Calrose (Sticky) Rice:

1 1/2 cups Calrose rice – .50

COST: $.50

Use Calrose, if you have it. Calrose is also called sticky rice. It is so good. Give it a try. Just note, it will not be flaky like long grain. It’s moist and yummy! Just follow this simple method for cooking rice and you can’t go wrong. Promise!

Pour rice into pot. Make sure your pot has a good lid. Add water to pot until it’s above the rice, precisely to your first finger tip knuckle line. Cover and bring to boil. Once boiling, reduce heat to slow simmer. Cook 20 mins and leave covered. DO NOT LIFT LID BEFORE 20 MINS!

Salad:

1/2 head Iceberg lettuce – $.50
2 large tomato – $.80
3 green onion – $.25
1 cucumber – $.33

COST: $1.88

Hawaiian Salad Dressing:

1 tbsp. lemon juice – $.25
1/3 c. sugar – $.10
1/3 c. catsup – $.35
1/2 c. canola or vegetable oil – $.50
1/4 c. vinegar – $.20
1 tsp. salt – pantry
1 tsp. paprika – pantry
1 tsp. grated onion – pantry
1 tsp. garlic (or powdered) – pantry

Mix dry ingredients with juice. Add onion, garlic, catsup and oil. Beat well (by hand not in mixer or blender). Add vinegar and mix again, by hand, vigorously.

COST: $1.40

GRAND TOTAL: $9.14
