Bean Burritos and Cream Cheese

I know these aren’t fancy and I know you’re probably thinking, “that’s not a meal”. Maybe you’re right, but really, until you’ve tried ’em, you just don’t know. Make these once and I promise, you’ll do them over and over again. Saturday night movie night has never been so yummy and so easy!

Bean Burritos with Cream Cheese:

1 lb Hamburger – $2.69
1 pkg Flour Tortillas (8 large or 12 snack size) – $1.79
8 oz pkg Cream Cheese or Neufchâtel Cheese (lower in fat) – $.99
1 16 oz. Refried Beans – $.69

COST: $6.16

Start comal or tapa heating. If you don’t have a comal or cast iron griddle, then use a fry pan to warm your tortillas.

Cook ground beef and season with salt and pepper to taste. Add can of refried beans to cooked hamburger and heat till thoroughly warm, steaming really. Be careful to not burn the beans.

Get your plate and area ready to roll burritos. Unpack cream cheese and have a butter knife on hand. You need a spoon to fill tortillas with bean mixture. Now you’re ready.

Warm each tortilla on both sides till lightly browned. Add 2 heaping Tbsps of bean mixture and a 1/4 inch or so slice of cream cheese to tortilla and roll.  Continue till bean and meat mixture is gone.

Serve with nachos and a good homemade salsa.

Note: You can add to this simple burrito. Maybe olives, chicken, avocado. We’ve added lettuce, tomato. It’s endless. But just know, the simple version works great for kids, movie nights, beach days, etc.
