Chicken and Avocado Pita with Savory Squash

I love the price of boneless chicken thigh. I mean, $2 bucks for 5 or 6 thighs. Wow! I realize some people are all about the white meat, but that thigh is some good eats. Don’t think it can’t be healthy in it’s own right. Trim the bad fat and hook up a pita with some good fat. AVOCADO!!

Chicken and Avocado Pita:

1 1/2 lb boneless Chicken thighs, cut into 1 inch chunks – $2.47
2 avocados, peeled and diced – $1.76
3 Roma tomatoes, diced – $.80
1/2 red onion, chopped – $.50
1 lemon (just the juice) – $.40
4 pita bread (Arabic Bread is a Great substitute. Cheaper too!) – $.75
1/2 head green leaf lettuce – $.50
2 tsp garlic, minced – pantry
3 tsp chopped cilantro (optional)
1/2 tsp of salt and pepper – pantry
2 tsp New Mexico Red chili powder – pantry
1 Tbsp Canola Oil – pantry

COST: $7.18

In a bowl, mix chicken, onion, garlic, lemon, chili powder, cilantro and salt and pepper. Set aside in fridge to marinate. 6 hours if possible. When done marinating, heat fry pan, add oil and cook marinated chicken till done. Set aside.

Prepare fixings. Dice avocado, tomato, onion and shred or slice lettuce.

Heat tapa or flat pan to medium high. Heat each Pita and fill with cooked chicken and fixings. Yummy rich goodness. Avocado and chicken is the best!

Savory Squash:

4 small Italian Squash or Zucchini – $.75
2 sliced Large Tomato – $.75
1 Serrano Pepper – $.15
1/2 tsp Oregano – pantry
1/4 tsp Salt – pantry
1 tsp Canola Oil – pantry

COST: $1.65

I would normally make Calabracita with these Pitas. However, I didn’t have any corn. So, I improvised and let me tell you…..Oh yeah! Savory Squash is tasty!

So simple. Slice your squash in 1/8 inch thick slices as well as the tomato. In heated fry pan, put in your oil and then squash. Add Salt and fry on medium to medium high for 4 mins. When slightly soft, add tomato. Let cook for 3 more mins.

In the meantime, if you like spicy, dice up your serrano pepper and add.  If not, just add Oregano. Continue cooking a few more minutes and season again to taste. So simple, so healthy and so scrumptious!
