Fried Chicken Legs and Broccoli Fettuccine

Broccoli Fettuccine

Pretty much the cheapest poultry available is chicken legs, right? So buy ’em! When you fry chicken, even if it’s just chicken legs, it will be tasty. Plus, I’ve never met a kid that didn’t devour a fried chicken leg!

Fried Chicken Legs:

1 pkg chicken legs (8 pieces) – 3.01
1 cup flour – $.25
1/4 cup corn meal flour – $.10
1 egg – $.13
1/4 cup milk – $.20
1 cup canola oil – $.20
2 Tbsp “Cajun Seasoning” (you must have this in your pantry) – pantry

COST: $3.88

I trim my legs of skin. Ugh! Sounds bad, don’t it? Seriously, they come with skin and you can leave it, no worries. I trim mine naked. If you like skin, leave it. Anyway, crack your egg in a bowl and add milk. Beat together and add a dash of salt and pepper. Set aside.

Put all your dry ingredients in a shallow dish and mix with a fork. At the same time, get your oil hot in a fry pan. Dip your chicken in egg mixture and roll in flour mixture.  Coat well.  Carefully place each leg in pan and fry.

Your pan should be hot when you start, but turn to medium to medium low to cook. Make sure you rotate legs often to prevent burning. It typically takes about 25-30 minutes to fry legs, but that varies with size.

Cheesy Broccoli Fetttuccine:

1/2 package fettuccine (cooked to package instructions) – $.75
2 Tbsp butter (not margarine) melted – $.15
1 stock fresh broccoli – $.45
1 clove garlic, minced – $.15
1 can cream of chicken soup – $.75
1 1/2 cup milk – $.50
1/4 cup parmesan cheese, grated – $.75

COST: $3.50

Cook fettuccine; keep warm. Set aside. During same time you are cooking pasta, add 1/2 cup water to pan with broccoli and bring to boil, cover and simmer till broccoli is soft. Approx. 15 mins.  Let cool.  Chop and set aside.

In a separate sauce pan, melt butter over medium heat and saute garlic.  Next, add soup and milk. Whisk till smooth. Bring to simmer.  Add parmesan cheese and cooked, chopped broccoli. Simmer 5 more minutes, stirring occasionally. Serve over warm Fettuccine and sprinkle with extra parmesan, if desired.

GRAND TOTAL: $8.37
