Green Chile and Avocado Quesadilla

I say this all the time, but you must capitalize on a good sale! With Avocado 2 for a $1 and Green Beans at $1.49 per lb, you make a meal happen.

We always have green chile preroasted and frozen, but for the rest of you, I included the price you’d pay if you weren’t as chile crazy as we are. BTW, you’re missin’ out if you don’t roast your own. Just sayin’.

Green Chile and Avocado Quesadilla:

8 Flour Tortillas – $1.40
4 ripe Avocado (price varies, but if you find avo on sale, this is a great meal) – $2.00
6 Poblano or New Mexico Green Chile, roasted and peeled (can works too) – $1.34
12 oz colby jack cheese, shredded – $2.00
salt and pepper to taste

COST: $6.74

Rub a small amount of oil/lard on fresh chile and roast in oven or over BBQ till slightly charred and cooked. Steam in wet, clean dish towel and then peel.  Yes, you can just open that can of roasted green chile. That works too.

Heat tapa/comal (pan) for quesadillas. Place first tortilla on comal, sprinkle some cheese, layer chile, salt and pepper, then layer a little more cheese and top with another tortilla. After first side of tortilla is cooked and cheese is melted, flip. Once other side is cooked, remove, plate and immediately lift tortilla while cheese is hot and layer in avocado. Salt and pepper to taste again, lay cooked tortilla back on avocado and there you go.  The most smooth and creamy quesadilla, ever!

Since I had fresh green beans on hand, I figured this would be a great side dish. Fresh produce is not only good for you and delicious, but typically well priced.

Fresh Green Beans

Fresh Green Beans:

1 1/2 lbs Fresh Green Beans, tipped and halved – $2.02
1/2 lb beef or pork stew meat, cubed – $1.00
4 cups water
2 Tbsp beef bouillon powder – pantry
2 bay leaf – pantry
salt and pepper to taste – pantry

COST: $3.02

Here’s the key to green beans with meat. Cook meat first and long. It’ll be nice and tender.

That said, season and brown stew meat in large pot with a bit of oil. Once browned, add 1 cup water and bring to boil. Reduce to slow simmer, cover and cook for 2 hours.

Now add additional water, cleaned and halved green beans and bring back up to boil. Once to boil, season with bouillon, 2 bay leaf, pepper and cook for 30 to 45 more mins. Shorter or longer, depending how soft you like your green beans.

Once cooked, taste and reseason with salt and pepper and remove bay leaf.

There you have it. Yummy green beans with the most tender stew meat you ever tasted! Perfect with these Southwestern style chile and avocado quesadillas.
