Grilled Jumbo Shrimp and Shark Salad

Mexican Jumbo Shrimp are really similar, if not pretty much a match, to prawns. And when you can get them for $4.99 a lb. Get ’em! I also bought a Thresher shark steak for $4 bucks. I wouldn’t necessarily put them together normally, but fresh is fresh, so this is what I came up with.

I’ll admit, it’s a bit over $10 bucks, but come on. Can you imagine what you’d pay for this in a restaurant?  Just take some of my savings from previous recipes and apply here. There. Done. We’re even! 🙂

Tequila Lime Jumbo Shrimp, Grilled or Sauted:

12 Jumbo Shrimp or prawns (3 per person, minimum) – $4.87
2 limes, juiced – $.50
handful cilantro, chopped – $.25 (free for me. I grew some this year.)
2 Tbsp tequila – pantry/bar
3 Tbsp canola or olive oil – pantry
2 tsps minced garlic or one clove crushed – pantry
1/2 tsp salt – pantry
A dash ground cumin – pantry
1/2 pepper – pantry

COST: $5.62

Mix lime juice, tequila, olive oil, garlic, salt, cumin and pepper in a bowl until well blended. Pour mixture into a large freezer bag. Add shrimp, seal and toss to coat evenly. Refrigerate for at least an hour, more preferably.

Grill until shrimp turn pink, turning once. First side will cook for 4-5 mins and flip. Second side should need only about 2 mins of grill time.

Seared Thresher Shark with Spinach Salad:

1 Thresher Shark Steak (about a 1/2 pound) – $3.99
One Baby Spinach bunch (if you can buy cheap, prewashed, do it) – $.75
1 Roma Tomato – $.15
1 red Pepper – $.88
2 Tbsps Soul or Cajun Seasoning – pantry
1 Tbsp Canola Oil – pantry

COST: $5.77

Lightly coat shark steak in season salt or cajun seasoning. Heat oil in a large, heavy skillet over high heat. The pan should be hot, slightly smoky. Place seasoned tuna in the pan, and sear on each side for about 1 minute. Reduce heat to medium low and let cook 3-4 mins on each side. Remove from pan and let rest.

After about 5 mins, slice and plate on salad. So good, you don’t even need dressing! A little squeeze of lime and you’re good to go!

GRAND TOTAL: $11.39 (Sorry for the over charge, just couldn’t pass up fresh shrimp and shark. It happens. Don’t sweat it.  Just remember all those $’s you’ve saved previously!)
