Lamb Chops, Cheddar Potatoes and Asparagus

One meat I know nothing about is lamb. OK, I know about gyro. Not making it, but eating it is yummo. No one in our house loves gyro more than my 8 year old daughter though. So, when she asked about having lamb chops, I wasn’t exactly surprised, but I was a bit perplexed. And nervous. I definitely don’t want to mess up her view of lamb. It happened to me and I am damn determined to not have it happen to her. I think I succeeded. She LOVED the chops. Cleared her plate. I am still not sold on lamb, but have to say, these chops were easy and very tender and tasty. Next time lamb chops are on sale, we’ll definitely gobble them up!

Broiled Lamb Chops:

4 lamb chops – $6.47
1 Tbsp Worcestershire sauce – pantry
1 tsp minced garlic – pantry
1 tsp sea salt and fresh ground pepper – pantry
1 tsp balsamic vinegar – pantry
1 Lemon juiced and sliced – $.25

COST: $6.72

Mix Worcestershire sauce, garlic, lemon juice and vinegar in large bowl or 1 gallon ziplock bag. Wash and pat lamb chops dry, sprinkle with salt and pepper and place in marinade mixture. Let sit for at least 30 mins then turn and sit for additional 30 minutes.

Preheat oven to high broil for at least 15 minutes. Placing chops about 4-5 inches from heat source, cook for 6-8 minutes and turn. Broil for an additional 4-5 minutes more and remove. Let stand 5 minutes before serving.

Cheddar Potatoes:

1 to 1 1/2 lbs red potatoes – $1.24
1/2 cup Cheddar cheese, shredded – $.50
1 Tbsp Butter – pantry
1 Tbsp Canola oil – pantry
1/2 tsp pepper – pantry
1-2 tsp salt (to your taste) – pantry

COST: $1.74

Clean and slice red potatoes about 1/4 inch thick. Boil till slightly cooked, about 6-7 mins. Rinse and toss with butter and oil while still hot. Place potatoes in baking dish, salt and pepper and bake in 375 degree preheated oven for 15 mins, uncovered.

Sprinkle cheese on baked potatoes and return to oven, increasing temp on oven to upper broil, 450 degrees and cook for 5-8 mins longer or until cheese is melted and slightly browned. Serve hot and cheesy!

Simple Grilled Asparagus is perfect with darn near everything! It was on sale for $1.99 a pound. Sauted with some butter and salt. You just can’t go wrong! $2.15
