Creamy Limón Pie

If you’re given fresh, local produce or fruit, you need to find something to do with it. Free is free. Am I right?

Well my brother has a number of lime, lemon and orange trees in his yard, so when my sister in law brought over some fresh limes and lemons, I started thinking. What can I make?

Well why not a smooth and creamy Limón Pie.  And yes, it’s under $5 bucks!

Limón Pie:

3 Limes and 1 lemon (1/3 cup lime juice and 1 Tbsp lemon juice) – Free from the tree!
1 can La Leche or Eagle brand Sweetened Condensed Milk – $1.65
1 package cream cheese (room temp) – $1.49

COST: $3.14

Beat cream cheese with mixer till smooth and creamy. Add can of condensed milk and continue mixing. Slowly add lime juice and lemon juice and mix until well blended. Pour into graham cracker crust (see recipe below) and let chill for 1 hour minimum. Top with Cool Whip, if you desire, and enjoy!

Teddy Graham Crust:

1 1/2 cup crushed teddy grahams (or use graham crackers, 1 Tbsp honey & 1 tsp cinnamon) – $.75
6 Tbsp butter (not margarine) melted – $.50
1/4 cup sugar – $.20

COST: $1.45

Mix & press into glass or metal pie pan. Bake 7 min. @ 375°. Let cool before pouring in cheesecake mixture.

GRAND TOTAL: $4.59

  1. Refreshing, tasty dessert. I made this pie today and just had a bite of it after dinner. How wonderful. Since I am out of limes I used lemons instead and was happy with the out come. Thanks for the great dessert!
